Boneless skinless chicken thighs from Mennonite-raised birds — the most forgiving piece of poultry in the kitchen. Hard to overcook, full of flavour, great with marinades. Cube for stir-fries, leave whole for tray-bake dinners, or grill them after a quick marinade. Pull at 175°F internal — dark meat gets more tender, not less. Sold in 1-lb packs.
