Roasted Mennonite-raised chicken carcasses — the bones we've stripped of meat for other products, oven-roasted and ready for stock. Simmer with onion, carrot, celery, peppercorn, and a bay leaf for 4+ hours; strain. The result: a stock that gels solid in the fridge, no powder, no compromise. Sold by the pound.
