A smaller whole free-range Mennonite-raised fryer chicken, typically 2.5–3.5 lbs. Better suited for two people, faster to cook than a roasting bird. Spatchcock it (we'll do this for you at the counter), salt heavily, roast at 425°F for 45 minutes until the thigh hits 165°F. Skin gets crispy, meat stays juicy.
