Vegetable Lasagna

Meat-free lasagna for the vegetarian table: roasted zucchini, peppers, eggplant, and spinach layered with fresh egg pasta, tomato sauce, ricotta, mozzarella, and Parmigiano. Same construction as the veal version, no meat. Two sizes — individual and family. Bake at 375°F for 35 minutes from chilled.
