A whole free-range, grain-fed Mennonite-raised chicken — typically 4–5 lbs, perfect for a Sunday roast feeding 4. Roast at 425°F for the first 20 minutes (skin sets and crisps), drop to 375°F, cook until the thigh hits 165°F (about 1 hour, 15 minutes for a 4-pounder). Rest for 15 minutes before carving. The leftover carcass is the start of the best chicken stock you'll ever make.
