Outside Round

Outside round, also called bottom round, is a lean cut from the back leg of the steer. We trim and tie ours for even roasting. Slow-roast at 275°F to a 130°F internal for medium-rare, rest 20 minutes, slice thin against the grain. Makes the best home-roasted deli beef you'll ever have. Also works well as a pot roast braised in stock with root vegetables.
