Boneless chuck from the shoulder of AAA Canadian beef — the workhorse cut. Use it as a pot roast, cube it for stew, slow-cook it for shredded beef, or grind it yourself for some of the best burgers you'll make. Heavily marbled, deeply flavoured. We trim ours clean and can portion or grind to your spec at the counter.
