Boneless skinless chicken breasts from free-range, grain-fed Mennonite-raised roasting birds. Bigger and more flavourful than supermarket boneless breasts. Brine for 30 minutes before cooking, pan-sear over medium-high for 5 minutes a side, finish in a 400°F oven to a 160°F internal (rises to 165°F resting). Don't overcook. Sold in 2-pack or 1-lb packs.
