Whole Quail

Whole farm-raised quail — small game birds, 4–6 oz each, fast-cooking. Spatchcock, marinate in olive oil, garlic, and herbs, grill or pan-roast for 8 minutes total. Serve 2 per person. Bright, gamey, far more interesting than chicken. Sold individually or by the pair.
