Ground bison from Canadian-raised herds. Leaner than beef (typically 90/10) but with a richer, gamier flavour. Cooks faster than beef and dries out if overcooked — pull burgers at 130°F internal for medium-rare. Use it in burgers, chili, meatloaf, or anywhere you'd use lean ground beef. Sold by the pound.
