Pork Picnic

Pork picnic shoulder — the lower half of the front leg, bone-in, skin-on (or off, on request). Cheaper and slightly leaner than a butt, with a similar long-cook profile. Rub heavily, smoke or slow-roast at 250°F until the internal hits 200°F, rest, pull with two forks. Or score the skin and slow-roast for crackling. Sized 8–12 lbs.
