Mortadella

Mortadella di Bologna — the original Italian Bologna, finely ground cured pork dotted with cubes of white fat and (sometimes) peppercorns. Soft, mild, almost buttery. Sliced wafer-thin at the counter. Eat on focaccia with mozzarella, fold into an antipasto plate, or layer into a proper Bolognese-style mortadella sandwich.
