Bresaola — Italian air-dried beef, salt-cured then aged 2+ months until firm and deeply flavoured. Lean (no fat marbling), salty, intensely beefy. Sliced paper-thin at the counter. Lay on a plate, drizzle with olive oil and lemon, top with shaved Parmigiano and arugula. The Italian beef-charcuterie classic.
