Bone-in, skin-on chicken breasts from Mennonite-raised birds. The bone holds the meat together during cooking and adds flavour; the skin crisps up and bastes the breast. Pan-sear skin-side down for 6 minutes until skin is crispy, flip, finish in a 400°F oven to a 160°F internal. The bone-in breast is more forgiving than boneless and tastes deeper.
