AAA Bacon-Wrapped Beef Tenderloin

Filet mignon portioned from whole AAA beef tenderloin, hand-wrapped in our naturally smoked side bacon, and secured with butcher's twine. The bacon bastes the lean cut as it cooks, adding flavour without overpowering the beef. Sear in a hot cast-iron pan for 3 minutes a side, finish in a 425°F oven to 125°F internal for medium-rare. Pairs with anything from mashed potatoes to a peppercorn cream sauce. The steak that makes Valentine's dinner make sense.
