Sopressata (Hot)

The hot version of our sopressata — same flat-pressed slow cure, with chili worked through. The Calabrian style: aggressive heat that builds and lingers. Slice thin, layer in sandwiches with sharp provolone, or eat on a board with sweet figs to balance the heat.
