Piave DOP — a hard cheese from the Dolomite mountains in northern Italy. Aged versions develop sweet, nutty, almost butterscotch notes that distinguish it from Parmigiano. Eat it in chunks on a cheese board with honey and almonds, or grate over hearty pasta dishes.
