Maple Smoked Cheddar

Medium cheddar cold-smoked over maple wood until the rind takes on a deep amber colour and the smoke flavour works its way through the paste. Sweet smoke, sharp cheese, balanced result. Try it on a charcuterie board with smoked meats or melted on a brisket sandwich.
