Jumbo Scallops

U-10 jumbo scallops — about 10 per pound, restaurant-grade. Pat very dry (this is the most important step), sear in a smoking-hot pan with avocado oil for 90 seconds a side until a deep brown crust forms, finish with butter and lemon. Serve 3 per plate over corn purée or risotto. Premium centerpiece dinner.
