Bone-in Ontario veal loin chops, cut about 1 inch thick. Mild, tender, gentle on flavour — pairs beautifully with sage, lemon, and butter. Pan-sear hard for 3 minutes a side over medium-high heat, finish in a 400°F oven to a 145°F internal, rest 5 minutes. Serve with risotto, polenta, or sautéed wild mushrooms. The veal equivalent of a pork chop done right.
