Halibut — thick, meaty, lean white fish steaks or fillets. The white-fish equivalent of a great steak. Pan-sear hard for 4 minutes a side over medium-high heat to a 130°F internal, rest 2 minutes. Pairs with brown butter and capers, salsa verde, or a chilled cucumber relish. A premium fish, treated like one.
