Double Smoked Pork Loin

Pork loin cured, then smoked twice in our smokehouse for an exceptionally deep, layered smoke profile. Sliced thin at the counter. The smoky cousin to standard sliced ham — layer in sandwiches with sharp cheese and grainy mustard, or fold into hearty winter sandwiches.
