Guanciale

Guanciale — Italian cured pork jowl. The traditional ingredient in proper carbonara and amatriciana (purists insist guanciale beats pancetta). Fattier, richer, deeply porky. Cube and render very slowly — the rendered fat is the actual sauce. Sold whole or sliced.
