The cut for confit (cure with salt and herbs, slow-cook submerged in duck fat at 250°F for 3 hours, store in fat, sear before serving), or simply slow-roast at 300°F for 90 minutes until the meat falls off the bone. Pairs with lentils, beans, or polenta.
