Capicola (Cappicollo)

Coppa, cappicola, gabagool — same thing, different spelling. Dry-cured pork shoulder, seasoned with garlic, paprika, and pepper, aged until silky. We slice it thin at the counter. Layer it on a sandwich with sharp provolone and pickled vegetables, or serve it on a charcuterie board with fig jam and a glass of red.
